One of Brentwood’s most loved traditions during Regatta is the Entrepreneurship 12 business venture. Each group opens (most commonly) a food stand for the weekend. This classic event marks the kick-off of Regatta for most students and a lot of the public.

I had the fortune to sample each booth’s food and ask the workers about the process behind the product.

Waking as early as 4 am, the students work until late at night. The first booths to open, Desayuno and West Coast Café, start at a quarter past too early. Up long before the sunrise over Mill Bay, they ensure food and coffee for grumbling coaches and rowers.

It isn’t always smooth sailing, though. “People come in waves. We’ll get seven, eight orders at once and it gets pretty crazy,” Oishii Rice Bowl says.

“There’s always people chilling around our booth. I think we’re the friendliest. People just come to hang out,” Parker G of the all-day breakfast explains.

When asked about highlights from each group, Nambi M of Oktoberfest says, “Making bank.”

“When you get really tired, everything gets a lot more entertaining,” Addy P says.

In all seriousness, despite demanding hours and high stress levels, each group tells me that it’s worth it. The payoffs of returning customers and excessive compliments put smiles on the students’ faces. The girls of Beaver Tails & Co. said that clients told them that their beaver tails are better than Mount Washington’s – I can attest; they’re delicious.

The amount of effort is clear, and the students are starting to reap the rewards of their hard work. We wish them the best of luck in their last few hours.
